We've been meaning to get to this - so we're just going to do it - blog about what we're working on today.
We've had good luck with OpenCV running on a laptop or mac mini with ubuntu. The laptop we happened to have can only use one camera though because of some quirk with USB (or maybe a 3 foot drop onto airport linoleum which caused us to have this laptop in the first place)
Still, we want to calculate depth maps ourselves (until Stereolabs hopefully donates a Zed camera) so we need two cameras.

Next up - depth maps... maybe even ROS too!
